Aztec Chocolate Quinoa Brownies


•1 1/4 C cooked quinoa

•1/2 C cocoa powder

•1/2 C maple syrup

•2 flax eggs (or real eggs)

•1/2 C raw almond butter

•1/4 C coconut sugar

•3 T milk alternative (I used homemade almond milk)

•1/4 C coconut oil

•1/2 C chocolate chips

•2 tsp vanilla

•1/2 tsp sea salt

•1 tsp coffee, dissolved in water

•1 tsp ancho chili powder


  • Preheat oven to 350F
  • Put all ingredients in blender and blend until smooth
  • Pour mixture into parchment lined baking dish (8x8)
  • Bake for 30-40 minutes.
  • Wait until brownies are completely cooled before removing from the pan.
